We had kofta skewers for supper on Monday, and the skewers come four to the package. So, we had to do something with the remaining two. When you live alone or with a partner, home cooking requires a bit of resourcefulness.
1) You can cook up a standard family meal and then eat leftovers for days. 2) You can cook up part of your ingredients to make a meal today and then postpone the remainder for a different meal in a day or two. 3) You can just say, “Screw it,” and eat fast food instead of cooking at home. Or 4) you can make a big meal and freeze the leftovers so that you can compost them later. I think that I have tried all of these approaches.
Tonight, I decided to make a Bucatini Cacio e Pepe and asked Susan to convert the kofta skewers into meatballs about 1-1.5″ in diameter. We added the meatballs to our pasta at the table, and a generous dollop of Tzatziki completed the marriage of Italian and Greek cuisines. It was as if the two cultures had a love child. Okay, maybe that is TMI regarding the dalliances of food cultures, I admit.

There was a Ceasar’s side salad, and a piece of demi-baguette for gratuitous carb porn. The meal was quite satisfying. BTW, this meal was in the spirit of approach #2 above.
