Tonight’s dinner was Greek meatballs made from Kofta skewers dressed in Tzaziki, a torn piece of French baguette, Bucatini cacio e pepe, and a refreshing salad of pineapple chunks with julienned basil and a dusting of Trechas chili powder. In other words, leftovers.
Half of our meals are like this – improv pieces based on ingredients from previous meals. When you live by yourself or with a sole partner, cooking meals takes a bit more imagination and a willingness to combine components from previous meals; otherwise, there is a lot of waste. I’m sure that most of you who, like we, are empty nesters, know these lessons as well as we do.
