I made tacos al carbon for dinner last night using our leftover Cowboy ribeye steak. Tacos al carbon are akin to beef fajitas, but they use other beef parts rather than skirt steak. I just heated up the stovetop grill and placed a few green onions on it. I sliced the steak thinly and put the slices on the grill after the onions were just a bit charred. Once the beef slices were browned, they were served with all the fixings in assemble your own fashion. The assembled tacos looked like this and were quite tasty.

This evening it is burgers for dinner. The Alamo Drafthouse, our dinner theater spot, used to make a delicious Spicy Bleu Burger that was made with a spicy aioli and bleu cheese crumbles. Alas, post-pandemic, they changed their menu. That particular burger is gone. So, I’m going to try to create the spicy bleu burger for tonight’s dinner.
Tomorow’s dinner is a surprise.
