I bought a shrimp cocktail dinner for two while Susan was away. I ate half of it one evening, and the other half stayed in the fridge until Susan came home. Tonight, we used it to make shrimp cocktail appetizer for two – adding diced avocado, a bit more shredded horseradish, and a stalk of green onion to the sauce.

Susan made some brown rice (our grocery store has been out of Basmati for a few weeks), and I pan-seared four big scallops in lemon butter. We had a few crostini with Basil pesto to round out our seafood porn extravaganza.
