I went to bed last night thinking about Menudo. This morning, Susan went to El Jacalito for Menudo and Huevos Mexicanos takeout. The Menudo, the breakfast of champions, was delicious. Our Mexican lunch was rather late; so, dinner didn’t happen until about 8:30PM.
We had set aside a couple of raw shrimps from the batch we used for yesterday’s meal. I had bought some shrimp flavored Ramen at our nearby Walgreens the other day. With a large, Royal Trumpet mushroom, I started the Mise en place, sautéed the sliced mushroom and shrimp, added boiling water to the ramen, and combined everything at the table. It was warming comfort food.
