Tonight, we had the third of our beef tongue dishes. One $20 tongue typically makes three meals for the two of us. The third meal is usually tongue tacos. Susan decided to make them this time. She took the remainder of the tongue and sliced it into think strips which she then marinated in beef stock from last night’s sous vide ribeye with Dos Pendejos BBQ spices.
The result was tacos of sliced avocado, tongue, salsa, and shredded cheddar and jack cheeses – downright pornographic and delicious.
