This evening’s dinner was created from leftovers; perhaps yours was as well. I sauteed leftover blue oyster mushrooms in EVOO and butter, then added leftover chopped cocktail shrimp. Fettuccini, heavy cream and shredded parmesan cheese finished the dish. It was a Fettuccini Shrimp and Mushroom Alfredo. It was yummy. It’s nice to be able to to eat real food once again.
