We watched some food program this past week, and one of the featured dishes was avocado with lobster. Perhaps it was a salad or maybe a sandwich. I don’t remember. Nonetheless, I woke up yesterday thinking that I should try making an avocado lobster sub kind of sandwich. After a quick online search, I came up with Ina Garten’s recipe for avocado-lobster sandwiches.

So, here is my rendering of her sandwich recipe using French bread. Let me say that I used only 1 & 1/2 avocados, and four, 4-5oz lobster tails (on sale at $6 each). The final product was very tasty, but a bit too salty for my tastes despite the fact that I am the kind of salt-eating fool who salts his food before tasting it. Cut the salt in her recipe by at least 50% if you decide to make it.
