Soup is the ideal comfort food for cold evenings, I think. Today, we invited our good friend Caren Zysk to join us for Roasted Tomato Basil Soup and 4-cheese Grilled Cheese Sandwiches. We haven’t seen one another in a year, I think. Employed people lead busier lives than those of us who are retired, and the COVID apocalypse and Susan’s surgery also factored into our somewhat spare social calendar this year. It was good to get together.

I cooked the soup this afternoon using Ina Garten’s recipe, of course. I’ve made it many times. Susan grilled the sandwiches using Gruyere, Mozzarella, Swiss and Parmesan cheeses on slices of a French Batard loaf that I bought at the Central Market this afternoon.

In the final stages of cooking, the soup looked like this.

This weekend will get colder in earnest – temperatures in the teens. I need to protect our outdoor water spigots, cut down the Brugmansia and umbrella plants in order to take some cuttings and cover the pruned plants more effectively, and bring in a few vulnerable plants. We may also need to have this soup a couple of more times this weekend. 🙂
