This is Susan’s favorite beef tongue dish, and it is typically the second of three dishes that we make from a beef tongue. I learned the recipe for it from my mother when I was in medical school.
It was perfect for a chilly evening. I always serve it with fried serrano peppers and flour tortillas.


I left a bit of it on my plate when I paused my meal. Soon, Maia was sitting in my dining chair and putting her face on what remained of the last tongue medallion. It gives a whole new meaning to the expression, “cat got your tongue?”
