Pacific cod loin, that is – not the loins that one girds before battle. Tonight, I prepared an artichoke with a garlic butter dipping sauce, and a piece of pan-fried loin cod lightly dusted with s salmon/trout seasoning. We had some of the mango-avocado-red onion-jalapeño salsa that I had made a few days ago for a salmon meal. It turned out quite tasty.
