I usually see this crust used on Mahi-mahi and sometimes Halibut. I decided yesterday to attempt a macadamia nut crust for white fish. At the grocery, I found a nice loin cod (Pacific white fish) filet. I also got some raw macadamia nuts.
The nuts went into the spice mill (a coffee grinder that I use for this purpose). I added twice as much volume of Panko crumbs and half as much shredded Parmesan. I coated the filet with the crust and pan-fried it in EVOO and butter. Our side for this meal was an artichoke with garlic butter.
The meal was tasty and looked like this. It was tasty and satisfying.
