The Central Market has been roasting Hatch chili peppers this week, and I bought some mild ones yesterday. This evening’s fare was Elote asado con Fajitas de res – roasted corn with beef fajitas both prepared on the outside grill. Susan sauteed the Hatch peppers and some sweet onion for the fajitas. A good meal was had by all.
