Tonight’s 40th anniversary meal was sous vide fillet mignon, finished in a cast iron skillet, and smothered in shiitake mushroom, bleu cheese sauce with a stuffed baked potato and a spinach salad with bleu cheese, fruit and walnuts. It was a celebration. Dessert is a plain, unit dose cheesecake, of course.

As you can see below, the steak was seared on the outside but medium rare on the inside. Mmmm.
