Here, it is a steak. It’s the equivalent of a 1-rib roast – a great, big ribeye steak. Think of it as Prime Rib. I bought one today. The Central Market has been tempting me with these for over a week. I had thought that I would grill it, but coming in at almost 2.9 lbs, it wasn’t likely going to cook evenly on my budget, propane grill. Susan cooked it in the oven, and it came out cooked to perfection. Here it is after a rest.

My serving is depicted below. We’re going to be eating this beast for another couple of days, I think. I’m going to have to buy more horseradish and another serving of vegetables tomorrow.
