We bought a nice filet of Atlantic salmon yesterday, and we put away our groceries before heading out for afternoon hair appointments. On our way home from hair trims, we passed by our local iHop. We were talking about salmon, and Susan interjected, “Or we could have pancakes.” Sure, why not? We could prepare the salmon on Sunday, after all.
We pulled into the iHop. The parking lot was empty; so was the restaurant. We sat down, and Phil came to wait on us. “Looks a bit slow,” I said. He smiled, “It’s always like this at night. They actually pay me more an hour just to do this shift because hardly anyone comes in.” He asked for our beverage order and went to fill it.
I decided on a BLT with fries. Susan ordered a BLT with four pancakes. We chatted and looked at our email and FB feeds. A bit later, Phil brought us our supper. The sandwiches were good. The company was excellent, and the exposure to other people was absolutely minimal.
Later, last night, I watched an episode of Pati’s Mexican Table on TasteMade – another cooking channel. Pati prepared a salad of tomato and avocado as a side for her fried Huachinango (Red Snapper). It looked interesting; so, today I modified my usual seafood salsa to add tomato and English cucumber. I made Mexican street corn, but I used butter rather than mayo this time – fewer calories, I think. The spread looked like this and was tasty.
