This entry comes a little late because we were watching Episode 5 of Resident Evil on Netflix tonight.

Earlier, dinner was Chicken Pipian with refried pinto beans. I cheated, of course. I wanted a tasty but simple meal. The chicken was a store-bought rotisserie chicken; the Pipian sauce came from Doña Maria’s Pipian paste and chicken broth, and the beans were Rosarita’s refried jalapeño beans. Add a couple of toasty flour tortillas, and you have a complete meal in about ten minutes.

Pipian, in the unlikely case that you do not know, is a mole type sauce that is characteristic of Southern Mexico and Guatemala. It has tomatillos, various chiles and spices with a binder of ground pepitas – pumpkin seeds. I love this sauce as much or more than Mole negro.
