Susan and I decided that we needed a new riff on roast duck. We get our ducks at the Central Market – our local grocery store. They come with giblets and a packet of cloyingly sweet, orange-colored sauce. I use the term sauce very loosely here because the condiment is more of a syrup. We usually have our roasted duck with chutney rather than the syrupy condiment included with the duck. For a side, we usually have roasted peewee potatoes.

Last night, we decided that I would make a proper orange sauce and that Susan would try smashed potatoes – a dish that our son had described to us during a recent FaceTime call.

I decided to riff on an orange sauce recipe from the BBC Food Network. I used shallot rather than onion, and store-bought fresh orange juice rather than squeezing oranges. Susan found an online recipe for garlic smashed potatoes.

The table is set for a wing and thigh of roast duck with giblets, and a tray of smashed potatoes.
