We ran out of frozen Borracho beans; so, a made a new batch today. Here’s the pot of beans and various spices waiting to be stirred up together.

They cooked slowly. Carving up the ham hocks was the most tedious part of the process.

The final meal was going to be beef tongue and beans, but I was tired after a day in the kitchen, and asked Susan to nuke some beef sausages instead. I’ll do the tongue tomorrow.
