Not a French kiss or any other kind of lingual teasing. It’s just beef tongue boiled for 90min in salted water with a bayleaf and a halved onion impaled with two cloves. The sauce is Pipian prepared from the tongue broth and a commercial paste for the sauce. The beans are yesterday’s borracho beans – always just a tad better the day after they were cooked.

A couple of flour tortillas and a glass of wine, and we’re set for a sumptuous meal.
