Celebratory Mussel Porn

I’m not talking about pumping iron here; that would be Muscle Porn. No, I’m talking about a dinner of PEI mussels with some leftover French baguette. These mussels were steamed in shallot sauteed with EVOO and butter, and a generous aliquot of Sauvignon Blanc.

I call them celebratory because moments after serving the dish, we heard that the Colorado Supreme Court had found Donald Trump guilty of insurrection and decided that he was therefore ineligible to run for the Presidency of the United States.

I have probably mentioned that Susan, my mom, I, and our extended family and friends have enjoyed vacationing in Colorado Springs and Estes Park Colorado for decades. I think that Coloradans, are an enlightened lot. This judicial decision only consolidates my opinion of them.

So, I dedicate this meal of mollusks to the citizens of the great state of Colorado. I served them at dinner tonight in their honor.
