I went to the Central Market with the intent of buying some Verlasso salmon for dinner. Verlasso is a farmed fish, and its flesh is yellowish – very fatty and unctuous. Of course, as with all aquacultures, it produces some undesirable pollutants. Alas.
On this occasion, the store had no Verlasso. I bought Icelandic salmon instead. They had steelhead and a few other kinds as well, but I chose Icelandic because of the price. Not only am I cheap; I’m easy too. I also picked up a plump artichoke, and made a nice salad of spinach leaves, arugula, and crunchy vegetables at the salad bar.
The fish got a light dusting with a spicy salmon rub, and then the panfry treatment. The final presentation looked like this.
