My epazote plants are now large enough that their leaves are about 2″ long. So, I decided to make a snack of quesadillas last night. Here you see a white corn tortilla on a small griddle. It has two slices of Queso Fresco, and four leaves of epazote – two on each slice of cheese. A second tortilla covered this base, and the entire affair was heated on the griddle until the cheese melted – just a few minutes with the flame on high.
Once my quesadilla was done, I cut it in half and we each had a snack.
