I keep exploring various ways to make meals for one or two people. If you are an empty nester or live alone, you know that it isn’t easy. One approach that I have found useful is t combine ramen noodles with various other ingredients. I especially like sauteed gulf shrimp and mushrooms of various kinds. My favorite mushroom for this purpose is Royal Trumpet, but Shiitake and Blue Oyster mushrooms work well too.

Here is this evening’s Noodle porn dish based on hot & spicy ramen with a couple of large gulf shrimp and blue oyster shrooms served with a side of grocery store squid salad. I was easy to prepare and yummy too.

    We often use things from previous days’ dinners: leftovers like veggies, meat,etc. It really makes a lovely meal!

    Sarah is a master of the two person meals but also likes to freeze leftovers for a quick solve on a busy evening.

    Have you tried Trader Joe’s meal offerings? A particular favorite of ours is a chinese frozen meal (TJ’s brand) with chicken, edamame, mushrooms and we pair it with one of their fried rice packages or part of one. It may leave a small portion if not finished but is often a full meal for each of us and no leftovers! It has made it to a regular spot on our menu plans! Try it. I’ll send the name of the dish when I next see it!!! We ate the one from the freezer this week!

    Hope you are both doing well. We have been mighty chilly for May but looking forward to a warm weekend for Mother’s Day! 🙂
