It’s that time of the month again – time for beef tongue dishes. This evening, I made Susan’s favorite beef tongue slices in Fideo pasta with peas. It’s always a hit. I typically fire roast a few Serrano peppers in the pan before preparing the Fideo and other ingredients.

These past few years, the Serranos have been tough on our geriatric digestive systems. So, tonight I prepared two Shishito peppers and two Serranos. The Shishitos are mild and tasty. One gets a little bite of spiciness without the digestive ill-effects. I recommend them to you, if like us, you were once a big fan of big heat but no longer tolerate it as we did when we were a decade or two younger.

The meal was tasty, filling, and satisfying. The company was good too.
