For those of us in Central Texas, this weekend was the first cold snap of 2022. We decided to celebrate it with a comfort food dinner – Roasted Tomato-Basil soup and grilled cheese sandwiches.

Ina Garten’s Roasted Tomato-Basil Soup and Susans’s Quattro Formaggi Grilled Cheese Sandwiches

The soup is from a Food Network recipe by Ina Garten. I tried it several years ago (maybe eight or so years), and I have never tried another recipe. I think this one is perfect. If you don’t already have a family favorite recipe for this soup, I invite you to try this one. I use sweet onions rather than yellow onions in mine, but like any recipe, there is plenty of room for nuance and improvisation. My immersion blender rarely gets exercised – except when I make this soup.

Roasted Tomato Basil Soup

The grilled cheese sandwiches are a Susan specialty consisting four cheeses (sliced Mozzarella, with shredded Gruyere, Swiss and Jack). The bread is a thickly sliced French Batard. These Quattro Formaggi grilled sandwiches are orgasmic.
