The other day when I brought Kofta home from the Central Market, I bought them in package of four. We never have space for more than one each; so, the other two went to the fridge for a couple of days. Yesterday, I asked Susan to take the ground, spiced lamb from the skewers to make them into meatballs. I looked up various recipes, and I decided on meatballs with orzo and Tzatziki sauce. A quick check of the pantry revealed that we had no orzo. We decided on couscous instead. It all worked out fine. We each had a pita as well.

  1. A very nice substitution. Here, I have two family members who will not eat couscous! I like it and will order it (when and if) I am able to go out again! Looks very good!!!!
