I bought Italian meatballs for supper a week ago. We ate half of them, and Susan froze the rest. Tonight, we resurrected them; it would have been better to pull them out of the freezer yesterday. Alas!
Susan turned the four large meatballs into eight smaller ones. I cooked some fettuccini. Susan sliced up our French baguette remnant and made into French bread. I cooked the not-so-thawed meatballs in Mom’s pasta sauce. The final dinner looked like this:


The salad was bits of pickled vegetables – olives, okra, Belgian endive with bleu cheese crumbles and a drizzle of Bordeaux cherry balsamic vinegar. Yum.

Tonite we used a rotisserie chicken from the store to provide the protein for our dinner. Sarah was busy until dinner time (which is rare) so my task was to bake two potatoes and to warm some leftover veggies from a previous meal. The result was fine: chicken, baked potatoes and roasted veggies plus enough chicken to provide the meat for a chicken pot pie in days to come soon! YEAH!
