I shot 33 frames of IC5070, The Pelican Nebula, last night. Tonight, I am trying to take as many again. In the meantime, we have to eat. So, this evening I prepared pan-fried giant scallops and some Cajun grilled oysters. The oysters were of a variety that we have not had before. The store sold them as “Black Magic Oysters.” I tried to find them online, but I was not successful. I suspect that they are a variety of East Coast oyster.
The oysters were smallish, reddish brown, and rather flat compared to the Gulf Oysters and Blue Points that I usually buy. The little oysters did not disappoint. They were sweet, and they went well with a bit of chopped garlic and cilantro, Tony Chachere’s Creole Spice, and a topping of melted, shredded Parmesan. The side was an artichoke and a piece of torn French Baguette. Yum.
