Tonight’s dinner was a Lobster Tail and Shiitake mushroom Marsala Linguini. I boiled the tails for 1 minute in order to make them easier to separate from their shells. Then they were sous vide for 1hr at 130F.

The mushrooms were sauteed in butter for five minutes and then a cup of marsala was added and reduced to 1/2 of its original volume. The sous vide tail meat was chopped and added to the mushrooms while the linguini got a 10min boil in salted water. Everything was combined, but I forgot to add the arugula to the pan before serving. Sigh; it’s my first time with this recipe.

After I realized the error of my ways, I added the fresh arugula and sprinkled some shredded Parmesan on the dish. It was quite tasty.

Our side dish was a wedge salad.
