Last week, one of my FB friends in Little Rock posted that Hatch peppers had arrived in his grocery store. A few days later, they appeared at the Central Market in Austin. A few days later still, the pepper roasting began. Today, it is ongoing. I bought a box of roasted, mild peppers a couple of days ago, and last night I prepared the last of our beef tongue with sides of Borracho beans and whole Hatch peppers.
The Central Market also prepares everything imaginable with Hatch peppers during a self-styled Hatch Festival. There are Hatch salsas, Hatch Totopos (tortilla chips), Hatch burger patties, Hatch sausage, Hatch muffins, and Hatch just about anything you can imagine! I prefer my Hatch peppers on the side where I can keep an eye on them.

Susan and I look forward to the appearance of Hatch peppers each summer, and we enjoy them for a week or so before the festival ends.
