I went to the store a couple of days ago looking for a lamb shoulder chop and a butterfly pork chop – it’s a meal that Susan and I enjoy once a month or so. There were no lamb shoulder chops, and I settled on a leg of lamb chop instead.
Tonight, I grilled both the lamb leg chop and Susan’s butterfly pork chop. Susan cooked an acorn squash in the oven. Our dinner was yummy and look like this.

This looks wonderful! Sarah makes both and I put both lamb chops and thick pork chops among my favorite meals! Last Monday, Sarah said we were having a “surprise” dinner. She prepared lamb shanks and served them with a wonderful gravy/ broth and fresh mashed potatoes and fresh oven roasted asparagus. A feast fit for royalty.
