We usually keep beef sausages on hand for those days that we have no clue as to what we should have for dinner. I could say the same thing for beans. Last evening, we talked about cooking some Mesquite Beef Kiolbassa for dinner. Later, watching streamed reruns of Iron Chef, I decided to look up recipes for Pigs in a Blanket. I came across a recipe for Pigs in a Poncho, and I decided then and there that we should have them.
Susan thawed the sausages and then nuked them. She warmed up some flour tortillas, and we set out some Pico and Guac that we had used on chalupas a couple of days ago. Somehow, in the process, we forgot to defrost and warm up the Borracho beans. Sigh. The pigs in a poncho looked like this.

It was a tasty piggy, but next time we really need to remember the BEANS!
