We woke up this morning realizing that we hadn’t discussed our dinner plans last night. After a bit of discussion, we decided to have Mesquite smoked sausages because we had some frozen, and we wouldn’t have to go to the store. Susan was coughing and feeling under the weather. I suggested that she take another COVID test; I had tested positive, after all. I asked her what we should have as a side. She suggested some of my Borracho beans – also frozen in the freezer.
Later, Susan pulled the sausages and beans out of the freezer in order to thaw them. She also performed another COVID test. Her test is still negative. She may have dodged that bullet despite living and sleeping with a COVID fomite. She’ll test again on Friday – just in case.
Here in Austin, we’re in the middle of a cold spell brought on by a cold front that brought us much needed rain this past week. The mercury hit a low of 86F today, and it will be even lower tomorrow. We don’t expect to break out the long sleeve wear or sweaters just yet, but they are handy.
Susan checked on the thawing beans and announced that the thawing item was actually roasted tomato basil soup rather than beans. I observed that we had bread and lots of cheeses. I proposed hot soup and grilled cheese sandwiches for dinner. She put the thawing sausages back in the fridge.
So, dinner this evening was reheated Roasted Tomato Basil Soup and Grilled Cheese Sandwiches made with shredded Swiss, shredded Parm, Queso Fresco, and Queso Oaxaca. The Queso Oaxaca seemed to have some mycelial growth, but we just cooked it to death. In the end, it was a tasty meal for a chilly summer evening.
