This is a dinner that I made myself several days ago; tonight I am repeating it. It is shrimp cocktail with basil pesto topped crostini, and a minimalistic side salad of pickled okra and jalapeno-stuffed olives. I hate cooking for one, and I’ll do almost anything to avoid it.

Food always tastes better when shared with company, of course. My favorite dinner guest has been visiting our son and his family in Omaha for the past week. She returns tomorrow, and I have a surf ‘n turf feast planned for her. 🙂
